Oat and Raisin Cookies

Ooooh! Ahh! I do love a good Oat and Raisin Cookie, I'm not a huge fan of chocolate cookies, but I can never resist one of these. Chris and I decided to give homemade oat and raisin cookies a go last weekend and we were pretty impressed with the outcome. They are super easy to make and if you're a keen baker, you're likely to have most the ingredients already in your cupboards. Be tempted and give them a try!

To make the Oat and Raisin Cookies you will need the following ingredients:
50g of margarine, you can also use butter if you like
50g of caster sugar
1 tablespoon of honey, runny honey is the best
1 egg
1 teaspoon of cinnamon powder
50g of wholemeal flour, plain flour also works
80g porridge oats
50g raisins

The steps to make these are also really simple, there's nothing too difficult:

Heat your oven to 180 degrees and line a baking sheet with greaseproof paper. Remember that these cookies will spread quite a bit whilst they cook, so you might need two trays if your baking sheet is quite small.

Mix together your margarine and sugar in a bowl until the mix is soft and creamy. You now need to mix in the honey, I would recommend using an electric whisk (if your weak and useless like me). Add in the egg and your cinnamon and mix the mixture well. 

Mix together your flour, baking powder, oats and raisins in a bowl and make sure than are combined well. Now add this mix into your butter mixture.

Now you are ready to put the mixture onto your trays. The amount completely depends on how big you want your mixture to be. The original recipe advised us to use heaped tablespoons of the cookie dough, but Chris put a bit more in each of ours.

You can now put them in an oven for 10-12 minutes, but keep an eye on them! Cookies can go from not-ready to ready very quickly. The cookie should look golden but still feel soft to the touch. Leave them on your baking tray for 1-2 minutes to cool slightly and then move them swiftly to a cooking rack.
